Privateer mullet smokes have been a longstanding tradition and fundraiser for the non-profit organization and many locals look forward to them each year. Our mullet smokes are scheduled to coincide with the start of the mullet run. This occurs when the first real cold weather makes it to the area at the end of October and continues through the first week or two of January. The price is usually determined at each smoke based upon fish size. We also make our own mullet spread for sale from unsold whole fish. It's known as some of the best you can buy, but it's not always available and only at certain venues. The Privateers have developed some fantastic recipes for smoked mullet over the years, so ask them for a recipe book when you pick up your next mullet.
